Sebastian Maliszewski in the Arctic

Chef Sebastian Maliszewski sent us photos from his trip to Antarctica. He is now sailing for the National Geographic Lindblad Expedition as Executive Sous Chef.

Sebastian writes: "Our ship moves around Antarctica, Cuverville Island, Lemaire Channel, Deception Island.
I sail for the National Geographic Lindblad Expedition as an Executive Sous Chef and am in charge of Captain Cook's fine-dining table, where I prepare a menu inspired by his travels.

We are the new eleven with ice breaking equipment, thanks to which we swim close to the southern Arctic Circle
We saw the largest penguin colony here. "

Sebastian writes about the ship on which he works: "We take 126 guests on board, 14 people are National Geographic team, journalists, camera operators and people for special tasks.


The kitchen is 26 people, we have 2 restaurants: Two Seven Zero and Tupaia and a special fine-dining table of Captain Cook, for which I am responsible."

Chef Maliszewski is responsible for Captain Cook's fine-dining table, where he prepares a menu inspired by his travels.
On the menu you will see hand-caught Pacific tuna roasted and served with sesame and avocado and wasabi mousse, long caramelized cabbage served with carrots and artichoke, hand-caught toothfish from Patagonia served with seaweed and for dessert, Captain Cook's favorite set: hazelnuts, whiskey and caramel.
