Kamil Kubiak is a sous chef in Nowa Lodz restaurant. In his kitchen, he looks for unexpected combinations of flavors. At first glance, they are unbelievable but make perfect sense when you taste them. Kitchen is his whole life, he feels like a fish in the water. Each team with whom he had the pleasure to work regarded him as a very demanding person who wants to convey all his the knowledge and passion.

You can see that the chef "enjoys" creating dishes. Congratulations on your courage! The risk is high, but the effect is great! Very intense sensations.

Chef with talent, ambitious, brave. Nice, polite, sociable. Some of your flavors were very nice and will be remembered by me. I have to pay attention to the length of the menu - with 10 items, the portions were definitely too large and in the middle of the menu you could already feel a little tired with this variety. Take this into account when designing your offer for Ulal. If you want to serve a 6-10 course tasting menu, make sure that your guests still feel like it and enjoy the food. In the case of our dinner, the portions could be easily reduced by half. And agree it among themselves in the group of chefs. I know that you wanted to show the widest possible range of skills, but remember that all this is done so that the customer only remembers good memories at the end :) More presence at the table, in conversations with guests, especially in a closed kitchen , as in this case, and less complex dishes;) Bryndza with jelly - very interesting and tasty. In the appetizer I liked the pork belly very much - the meat was tender and melted in my mouth. What I liked the most about the main course was the side dish - chorizo groats. The dessert with gooseberry ice cream was probably your best dish. The gooseberry flavor in the ice cream is simply wonderful and nostalgic. Few in gastronomy.
